As with all vintages, each parcel was kept separate until final blending, vinification occurring in open-topped fermenters, then traditional basket pressing before transferring to a selection of new and seasoned French oak hogsheads for sixteen months.
Final assemblage occurred in October prior to bottling both unrefined and unfiltered. This release of the Prophecy Clare Valley Shiraz, available only to Kilikanoon Wine Club members, has been composed of selected premium vineyards in the Clare Valley.
Tasting Notes:Ā Flavours of dark cherries, classic red fruits, kitchen spices and subtle cherry oak complete the aroma. The palate marries red fruits, hints of cocoa and cherry plums with supportive French oak, fine tannins and defining natural acid balance in a long and expressive finish.
