Shiraz from Hollick’s Wrattonbully vineyard.
This gathers some momentum. It tastes of plum and sweet black cherry and comes complemented by a modest glide of creamy vanillin oak. It’s not complex but it’s supple, at least through the mid palate, and generally well flavoured. It’s a straightforward shiraz, done reasonably well.

A big fat Aussie classic, and a shiraz from the South Australian terra rossa more famously associated with Cabernet Sauvignon. Fresh and ripe black-fruit fundamentals, with time on oak giving chocolate and vanilla notes while cultivating a magnificently well-structured tannic finish.
Winemakers Comments
The Hollick ‘Red Ridge’ Wrattonbully vineyard with its rolling hills and stony soil, is a fantastic site for quality wine grape production. The vineyard was planted in 1998 and boasts similar shallow terra rossa soils over limestone to Coonawarra, but is marginally warmer resulting in slightly earlier ripening. Our Wrattonbully vineyard consistently produces low yields of fruit with intense flavour and colour. The Hollick Shiraz displays the rare combination of power and elegance. There is an abundance of sweet Shiraz fruit flavours, but the wine retains a good balance and surprisingly supple tannins. Flavours and aromas of honeysuckle, passionfruit skins and roses typical to the Wrattonbully wine region underline the complexity of the wine and are in harmony with the primary black fruits of the Shiraz variety.
About the Winery
Established in 1974 by the husband-and-wife vigneron duo of Ian and Wendy Hollick, Hollick’s three vineyards cover 80ha, with two planted in the Coonawarra terra rossa and another in the nearby Wrattonbully region. Hollick have taken an adventurous approach to winemaking, with plantings of Tempranillo, Sangiovese, Barbera and Savagnin supplementing the more standard Coonawarra plantings of Cabernet Sauvignon, Shiraz and Merlot. The Hollicks are well-known for their service to the Coonawarra community and the Australian wine industry, and Wendy Hollick was awarded the title “Patron of Coonawarra” in 2016.
