Initially, the wine displays fresh citrus zest and stone fruit with a subtle honeyed toast and poached pear richness. The mid-palate then showcases a creamy softness, layered with vanilla and sweet spice.

Overall, the wine is well-balanced with a fine, delicate mousse and finishes with clean crisp, refreshing acid. Nuances of crème brûlée, quince, and a tingling minerality accompany the finish.

But they do face a common problem - climate change. Seahorses, much like grapevines, are indicator species that raise the alarm for serious climate-related issues. It's very important we do what we can to reverse their population decline before it's too late.

At national and global scales, Taylors partner with two organisations that are working to protect seahorses and secure thriving populations of these quirky fishes.
