A grassy perfume gives way to lime cordial, kaffir lime leaf, lemon blossom, preserved lemon and a hint of mandarin here - the citric cornucopia thoughtfully cushioning, for a moment at least, the bracing impact of a sky-high acidity typical to this style.
Harvested by hand and rested on lees. “Cushioned” above is typical of this wine, unafraid to guide an imbiber through what might otherwise be an austere and unapproachable structure.
From The Winemaker
The story of Watervale is one well worth telling with classic, Flinty wet sand minerality with kafir lime and lemon blossom. The flavour is fresh and bright. Struck match flintiness with exotic limes. Long and linear with sweet fruit and textural tangents giving the wine complexity and generosity.
About the Winery
With a gorgeous stone cellar-door building, a long history, and a enviable spot in quintessential South Australian wine territory, one could be forgiven for pre-judging family-owned winery Mitchell as stodgy. Quite the contrary, of course - they were among the first to adopt organic farming and biodynamic techniques, and while sticking to classic Clare Valley varietals there's always an element of innovation to the tradition.
